Ribs Preparation

    Rub the Ribs

    In a small bowl, mix together the smoked paprika, brown sugar, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Rub this spice mixture generously over all sides of the St. Louis style ribs.

    Smoke the Ribs

    Preheat your smoker to 225°F (107°C). Place the seasoned ribs in the smoker and smoke for 4 hours, or until the meat is tender and pulls away from the bone easily.

    Add BBQ Sauce

    During the last 30 minutes of smoking, brush the ribs with BBQ sauce to create a caramelized glaze.

    Prepare Coleslaw

    In a large bowl, combine coleslaw mix with your choice of dressing. Toss until well coated and let it sit for at least 10 minutes before serving.

Serving

    Plate the Ribs

    Once the ribs are done smoking, remove them from the smoker and let them rest for 10 minutes. Cut between the bones to separate the ribs. Serve three bones per plate with a generous scoop of coleslaw on the side.
