Thaw the Turkey
If using a frozen turkey, ensure it is fully thawed in the refrigerator for 1-2 days prior to cooking.

Preheat your oven to 325°F (165°C).

Prepare the Turkey
Remove the giblets and neck from the turkey cavity. Pat the turkey dry with paper towels.

Rub the turkey with olive oil, then season generously with salt and black pepper, ensuring to season inside the cavity as well.

Stuff the cavity with garlic cloves, lemon, onion, carrots, celery, rosemary, thyme, and sage.

In a large skillet, melt butter over medium heat. Add diced onion and diced celery, cooking until soft, about 5 minutes.

In a large bowl, combine the bread cubes, sautéed onion and celery, chicken broth, oregano, sage, salt, black pepper, and eggs. Mix well to combine.

Gently fill the turkey cavity with the stuffing mixture. Do not pack it too tightly, as the stuffing will expand while cooking.

Place the turkey breast-side up on a rack in a roasting pan. Roast in the preheated oven for about 13-15 minutes per pound.
