Method
Preparation
- 1
Prepare the Marinade
In a medium bowl, whisk together olive oil, minced garlic, chopped rosemary, salt, black pepper, and lemon juice until well combined.
- 2
Marinate the Tenderloin
Place the beef tenderloin in a large resealable plastic bag or a shallow dish. Pour the marinade over the meat, ensuring it is evenly coated. Seal the bag or cover the dish, and refrigerate for at least 2 hours, preferably overnight for the best flavor.
Cooking
- 3
Preheat the Oven
Preheat your oven to 400°F (200°C).
- 4
Sear the Tenderloin
Heat a large oven-safe skillet over medium-high heat. Remove the tenderloin from the marinade, allowing excess to drip off. Sear the tenderloin on all sides for about 3-4 minutes per side until it is nicely browned.
- 5
Roast the Tenderloin
Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare, or to your desired doneness.
- 6
Rest the Meat
Once cooked to your preference, remove the tenderloin from the oven and let it rest for 10-15 minutes before slicing. This allows the juices to redistribute and ensures a tender result.
