Method

Preparing the Wings

    Step 1: Prepare the Chicken Wings

    Rinse the chicken wings under cold water and pat them dry with paper towels.

    In a large bowl, toss the chicken wings with olive oil until evenly coated.

    In a small bowl, mix together paprika, garlic powder, onion powder, black pepper, salt, cayenne pepper, and smoked paprika.

    Sprinkle the dry rub over the wings and toss to coat evenly. Let sit for at least 30 minutes (or refrigerate for several hours for more flavor).

Smoking the Wings

    Preheat your smoker to 225°F (107°C). Use your choice of wood chips for smoking.

    Place the wings on the smoker grates, making sure they are not touching. Smoke for about 2 hours or until the wings reach an internal temperature of 165°F (74°C).

Making the Buffalo Sauce (Optional)

    In a saucepan over medium heat, combine hot sauce, unsalted butter, garlic powder, and salt. Stir until melted and well combined. Remove from heat.

Making the Ranch Dressing

    In a bowl, whisk together buttermilk, mayonnaise, dried dill, garlic powder, onion powder, and salt. Adjust seasoning to taste.

Serving
