Preparing the Wings

Step 1: Prepare the Chicken Wings
Rinse the chicken wings under cold water and pat them dry with paper towels.

In a large bowl, toss the chicken wings with olive oil until evenly coated.

In a small bowl, mix together paprika, garlic powder, onion powder, black pepper, salt, cayenne pepper, and smoked paprika.

Sprinkle the dry rub over the wings and toss to coat evenly. Let sit for at least 30 minutes (or refrigerate for several hours for more flavor).

Making the Buffalo Sauce (Optional)

Step 7: Prepare the Buffalo Sauce
In a saucepan over medium heat, combine hot sauce, unsalted butter, garlic powder, and salt. Stir until melted and well combined. Remove from heat.
Making the Ranch Dressing

In a bowl, whisk together buttermilk, mayonnaise, dried dill, garlic powder, onion powder, and salt. Adjust seasoning to taste.

Once smoked, you can serve the wings dry or toss them in the buffalo sauce. Serve with the house-made ranch dressing on the side.
