Preparation

Preheat the Oven
Preheat your oven to 325°F (163°C).

Prepare the Ham
Place the bone-in smoked ham on a large roasting pan, fat side up.

Score the Ham
Using a sharp knife, score the surface of the ham in a diamond pattern, about 1/4 inch deep.
Glaze Preparation

Mix the Glaze
In a mixing bowl, combine brown sugar, honey, Dijon mustard, ground cloves, and black pepper. Mix well until a thick paste forms.

Apply the Glaze
Spread the glaze mixture evenly over the scored surface of the ham.
Cooking

Bake the Ham
Cover the ham loosely with aluminum foil and place it in the preheated oven. Bake for approximately 15 minutes per pound, about 1.5 to 2 hours.

Optional Maple Glaze
If using, mix maple syrup and apple cider vinegar in a bowl and brush it over the ham during the last 30 minutes of cooking.
Serving

Rest and Slice
Once cooked, remove the ham from the oven and let it rest for at least 15 minutes before slicing. Serve warm.
