Preparing the Pork Tenderloin

Butterfly the Tenderloin
Place the pork tenderloin on a cutting board and slice it lengthwise without cutting all the way through, then open it like a book.

Season the Pork
Sprinkle salt, black pepper, smoked paprika, and garlic powder all over the butterflied tenderloin. Let it marinate for about 15 minutes.

Make the Batter
In a large bowl, combine all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in cold water until you achieve a smooth batter.
Frying the Tenderloin

Heat the Oil
In a deep skillet or fryer, heat oil to 350°F (175°C).

Batter and Fry the Tenderloin
Dip the smoked tenderloin into the batter, ensuring it is fully coated. Carefully place it into the hot oil and fry for about 5-7 minutes or until golden brown and crispy.

Drain the Tenderloin
Once cooked, remove the tenderloin from the oil and place it on a paper towel-lined plate to drain excess oil.
Assembling the Sandwich

Prepare the Buns
Slice the buns in half and spread mayonnaise on both sides.

Place the fried tenderloin on the bottom half of each bun. Top with pickles and sliced onions, then cover with the top bun.
