Prepare the Chicken
Rinse the chicken thighs under cold water and pat them dry with paper towels.

If using the optional marinade, mix soy sauce, honey, and lemon juice in a bowl. Add chicken thighs, ensuring they are well coated. Marinate for at least 30 minutes or up to 4 hours in the refrigerator.

Season the Chicken
In a small bowl, combine smoked paprika, garlic powder, onion powder, salt, and black pepper. Rub the spice mixture evenly over the chicken thighs. Drizzle with olive oil to help the rub adhere.

Prepare the Smoker
Soak the wood chips in water for at least 30 minutes before smoking. Preheat your smoker to 225°F (107°C).

Smoke the Chicken
Place the seasoned chicken thighs on the smoker rack. Add the soaked wood chips to the smoker box or directly onto the coals. Smoke the chicken thighs for about 2 to 2.5 hours or until the internal temperature reaches 165°F (74°C).

Rest and Serve
Remove the chicken from the smoker and let it rest for about 10 minutes before serving. This allows the juices to redistribute, keeping the chicken moist.
