    Soak the Beans

    Rinse the dry navy beans under cold water. Place them in a large bowl and cover with 6 cups of water. Let them soak overnight, or for at least 8 hours.

    Cook the Beans

    Drain the beans and transfer them to a large pot. Add fresh water to cover the beans by 2 inches. Bring to a boil, then reduce heat and simmer for about 1.5 to 2 hours, or until beans are tender.

Flavoring and Smoking

    Prepare the Flavor Base

    In a large skillet over medium heat, cook the smoked bacon until crispy. Remove the bacon and chop it into small pieces, leaving the bacon fat in the skillet. Add the chopped onion and minced garlic to the skillet and sauté until the onion is translucent.

    Combine Ingredients

    In the pot with the cooked beans, add the sautéed onion and garlic, chopped bacon, brown sugar, ketchup, mustard, Worcestershire sauce, smoked paprika, black pepper, and salt to taste. Stir until well combined.

    Transfer to Smoker

    Transfer the mixture to a smoker-safe pan or dish. If using a smoker, preheat it to 225°F (107°C). Smoke the beans for 2 to 3 hours, stirring occasionally, until thick and bubbly.

Serving

    Garnish and Serve

    Once the beans are done smoking, remove them from the smoker. Garnish with chopped parsley and sliced green onions if desired. Serve warm as a side dish or main course.
