Portabella Burger Recipe
This is a vegetarian’s dream. A fire grilled portabella mushroom topped with grilled zucchini, squash, red onion, roasted red peppers, your choice of cheese and chipotle mayo with a brioche bun.

Burger Preparation

Grilling the Portabella Mushrooms
Preheat your grill to medium-high heat. Clean the portabella mushrooms with a damp cloth and remove the stems. Brush them lightly with olive oil and sprinkle with salt and pepper. Place them on the grill gill-side down and cook for about 5-7 minutes. Flip and grill for another 5 minutes until tender.

Grilling the Vegetables
Slice the zucchini and yellow squash into 1/4 inch thick rounds. Cut the red onion into thick slices. Brush the vegetables with olive oil and season with salt and pepper. Grill the zucchini, yellow squash, and red onion for about 3-4 minutes on each side, until they have nice grill marks and are tender.

Assembling the Burger
Toast the brioche buns on the grill for about 1-2 minutes until golden brown. On the bottom half of each bun, place a grilled portabella mushroom. Top each mushroom with grilled zucchini, squash, red onion, roasted red peppers, and your choice of cheese. Close the burger with the top half of the bun.

Making the Chipotle Mayo
In a small bowl, combine mayonnaise, chipotle in adobo sauce, lime juice, and salt. Mix well until all ingredients are thoroughly combined. Adjust seasoning to taste.

Serving
Spread a generous amount of chipotle mayo on each side of the brioche bun before serving. Enjoy your delicious portabella burger!
