Method

Marinating the Pork

    Prepare the Marinade

    In a bowl, combine olive oil, minced garlic cloves, fresh rosemary, salt, black pepper, and lemon juice. Mix well to create a marinade.

    Marinate the Pork Steaks

    Place the pork steaks in a shallow dish and pour the marinade over them, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or up to overnight for maximum flavor.

Grilling the Pork

    Prepare the Grill

    Preheat your wood fire grill to medium-high heat. Make sure the grill grates are clean and lightly oiled to prevent sticking.

    Grill the Pork Steaks

    Remove the pork steaks from the marinade and let any excess drip off. Place the steaks on the grill and cook for about 6-8 minutes on each side, or until the internal temperature reaches 145°F (63°C).

    Rest the Steaks

    Once cooked, remove the pork steaks from the grill and let them rest for 5 minutes before serving. This allows the juices to redistribute, resulting in a more flavorful steak.
