Method

Cooking the Pasta

  1. 1

    Step 1: Boil the Pasta

In a large pot, bring 4 cups of water to a boil. Add 1 tsp of salt to the boiling water.

  2. 2

    Step 2: Cook the Pasta

Add 2 cups of pasta to the boiling water. Cook according to package instructions, usually about 8-10 minutes, until al dente.

  3. 3

    Step 3: Drain and Rinse

Drain the cooked pasta in a colander and rinse under cold water to stop the cooking process. Set aside to cool.

Preparing the Vegetables

  1. 4

    Step 4: Chop the Vegetables

While the pasta is cooking, prepare the vegetables. Halve 1 cup of cherry tomatoes, dice 1 cup of cucumber, and 1 cup of red bell pepper. Finely chop 1 small red onion and slice 1 cup of black olives.

Making the Dressing

  1. 5

Step 5: Combine the Dressing Ingredients

In a small bowl, whisk together 1/4 cup of olive oil, 2 tablespoons of red wine vinegar, 1 teaspoon of Dijon mustard, and 1 minced garlic clove. Season with salt and black pepper to taste.

Assembling the Salad

  1. 6

    Step 6: Combine All Ingredients

In a large mixing bowl, combine the cooled pasta, chopped vegetables, and the dressing. Toss until well combined.

  2. 7

    Step 7: Add Fresh Herbs

Fold in 1/4 cup of chopped fresh parsley and 1/4 cup of chopped fresh basil for added flavor.

  3. 8

    Step 8: Chill and Serve

Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled.
