    Wash the jalapeno peppers thoroughly. Cut off the tops and slice them into thin rings, about 1/4 inch thick. Remove the seeds if you prefer less heat.

    In one bowl, place the all-purpose flour and season with salt, black pepper, and paprika. In a second bowl, whisk together the eggs and milk until well combined. In a third bowl, place the cornmeal.

    Bread the Jalapenos

    Take a jalapeno slice, dip it into the flour mixture, coating it thoroughly. Next, dip it into the egg mixture, allowing any excess to drip off. Finally, coat it in the cornmeal, pressing gently to ensure it sticks. Repeat with all jalapeno slices.

    Heat the Oil

    In a large, deep skillet or pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

    Carefully place the breaded jalapeno slices into the hot oil, frying them in batches to avoid overcrowding. Fry for about 2-3 minutes on each side or until golden brown. Remove with a slotted spoon and drain on paper towels.

Housemade Ranch

    In a medium bowl, combine the mayonnaise, sour cream, and buttermilk. Whisk until smooth.
