Prepare the Ingredients
Gather all the ingredients and slice the hoagie rolls lengthwise, making sure not to cut all the way through. Also, slice the pickles into thin rounds if they aren't pre-sliced.

Assemble the Sandwich
Spread 1 tablespoon of spicy brown mustard on the inside of each hoagie roll. Layer the smoked pork loin, pit ham, and Swiss cheese evenly inside each roll. Add a generous amount of pickles on top of the cheese.

Grill the Sandwich
If using butter, spread 1/2 tablespoon on the outside of each assembled sandwich. Heat a grill or pan over medium heat. Place the sandwiches on the grill and press down slightly with a spatula. Grill for about 4-5 minutes on each side, or until the bread is golden brown and the cheese is melted.

Serve the Sandwich
Remove the sandwiches from the grill and let them rest for a minute. Slice in half diagonally and serve hot.
