Let’s start with a Texas toast grilled cheese. On one side we mound with your favorite meat and the other side we mound mac and cheese. This sandwich is a one of a kind and you will not leave hungry.

Mac & Cheese Preparation

    Cook the Pasta

    In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to the package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce

    In the same pot, melt 2 tablespoons of butter over medium heat. Add the flour, whisking constantly for about 1 minute to form a roux. Gradually whisk in the milk, stirring until the mixture thickens. Add the cheddar cheese, salt, black pepper, garlic powder, and onion powder. Stir until the cheese is melted and the sauce is smooth.

    Combine Pasta and Cheese Sauce

    Add the cooked macaroni to the cheese sauce and stir until the pasta is well coated. Remove from heat and set aside.

Sandwich Assembly

    Prepare the Bread

    Butter one side of each slice of Texas toast bread with 1 tablespoon of butter for grilling.

    Build the Sandwich

    On the non-buttered side of two slices of bread, add a generous mound of mac and cheese. On the other two slices, place an even layer of cooked bacon or sausage.

    Combine and Grill

    Carefully press the bread slices together, making sure the mac and cheese and meat are sandwiched in between. Grill the sandwiches in a skillet or griddle over medium heat for about 3-4 minutes per side or until golden brown and crispy.

    Serve

    Remove the sandwiches from the skillet, slice in half if desired, and serve hot.
