Mac & Cheese Preparation

Cook the Pasta
In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to the package instructions until al dente. Drain and set aside.

Make the Cheese Sauce
In the same pot, melt 2 tablespoons of butter over medium heat. Add the flour, whisking constantly for about 1 minute to form a roux. Gradually whisk in the milk, stirring until the mixture thickens. Add the cheddar cheese, salt, black pepper, garlic powder, and onion powder. Stir until the cheese is melted and the sauce is smooth.

Combine Pasta and Cheese Sauce
Add the cooked macaroni to the cheese sauce and stir until the pasta is well coated. Remove from heat and set aside.

Prepare the Bread
Butter one side of each slice of Texas toast bread with 1 tablespoon of butter for grilling.

Build the Sandwich
On the non-buttered side of two slices of bread, add a generous mound of mac and cheese. On the other two slices, place an even layer of cooked bacon or sausage.

Serve
Remove the sandwiches from the skillet, slice in half if desired, and serve hot.
