Prepare the Chili

    Cook the Beef and Onions

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 cup of chopped onion and cook until softened, about 4-5 minutes. Add 1 pound of ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes.

    Add the Garlic and Spices

    Stir in 2 minced garlic cloves, 2 tablespoons of chili powder, 1 teaspoon of cumin, 1 teaspoon of salt, and 1 teaspoon of black pepper. Cook for an additional 2 minutes until fragrant.

    Add Tomatoes and Beans

    Add the drained kidney beans and diced tomatoes to the skillet. Stir to combine and bring the mixture to a simmer. Reduce the heat to low and let it cook for about 15-20 minutes, stirring occasionally.

Cook the Hot Dogs

    Grill or Boil Hot Dogs

    While the chili simmers, cook the quarter pound hot dogs either by grilling or boiling them according to package instructions until heated through.

    Prepare the Buns

    Toast the hot dog buns on the grill or in a toaster until lightly browned.

Assemble the Chili Dogs

    Place each cooked hot dog into a toasted bun. Generously spoon the homemade chili over the hot dogs.

    Top each chili dog with shredded cheddar cheese and chopped onion to taste.
