    Prepare the Ingredients

    Rinse and drain the kidney, black, and pinto beans. Chop the onion, bell pepper, and carrot into small pieces. Mince the garlic cloves.

Cooking

    Brown the Beef

    In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Break it up with a spoon as it cooks.

    Sauté the Vegetables

    Add the chopped onion, bell pepper, carrot, and minced garlic to the pot with the browned beef. Sauté for 5-7 minutes until the vegetables are softened.

    Add Beans and Sauce

    Stir in the rinsed beans, diced tomatoes (with their juice), tomato sauce, chili powder, cumin, salt, and black pepper. Mix well to combine.

    Simmer the Chili

    Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for at least 30 minutes, stirring occasionally. This allows the flavors to meld together.

Serving

    Serve the Chili

    After simmering, taste and adjust seasoning if necessary. Serve hot in bowls, garnished with your choice of toppings such as sour cream, shredded cheese, or green onions.
