Slice the bell peppers and onion into thin strips.

Shred the Chicken
Shred the smoked chicken thighs into bite-sized pieces.

In a large skillet, heat olive oil over medium heat. Add the sliced bell peppers and onion. Season with salt and black pepper. Sauté for about 5-7 minutes until the vegetables are soft and slightly caramelized.
