Prepare the Meat
Choose either brisket or pork belly, and trim any excess fat. Cut the meat into 1-inch cubes.

Apply Dry Rub
In a bowl, mix together the brown sugar, paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper. Generously coat the meat cubes with the dry rub, ensuring they are evenly covered. Let sit for at least 30 minutes.

Assembling the Sliders

Prepare the Buns
While the meat is caramelizing, slice the slider buns in half. If desired, toast them lightly on a grill or in a toaster.

Assemble the Sliders
Place a generous portion of the smoked meat on the bottom half of each slider bun. Top with coleslaw if desired and place the top half of the bun over the filling.
