Prepare Tortilla Chips

Heat the Oil
In a large, heavy-bottomed pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Tortillas
Cut the corn tortillas into triangles. Carefully add a handful of tortilla triangles to the hot oil. Fry until golden brown and crispy, about 2-3 minutes.

Drain Chips
Using a slotted spoon, remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil. Sprinkle with salt to taste.
Assemble Nachos

Layer the Nachos
On a large serving platter or baking sheet, spread a layer of fried tortilla chips. Top with a portion of the smoked meat.

Add Toppings
Evenly distribute the diced tomatoes, red onion, jalapeños, and shredded cheese over the chips and meat.

Melt the Cheese
Place the assembled nachos under a broiler for 2-3 minutes, or until the cheese is melted and bubbly.

Remove from the oven and drizzle with the house-made sweet BBQ sauce and dollops of sour cream.
