Prepare the Vegetables

Peel and chop the carrots, parsnips, sweet potatoes, and beets into small, even pieces. Mince the garlic.

Cook the Vegetables

In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Add the chopped root vegetables, salt, and black pepper, stirring to combine.

Add Broth and Simmer

Pour in the vegetable broth, bring to a boil, then reduce heat to low. Cover and let simmer for 20-25 minutes, or until the vegetables are tender.

Puree the Mixture

Once the vegetables are tender, remove the pot from heat. Using an immersion blender, puree the mixture until smooth. Alternatively, transfer to a blender in batches.

Finish and Serve

Stir in the fresh thyme and adjust seasoning with more salt and pepper if needed. Serve warm.
