Method

Preparation of Beef Short Ribs

    Sear the Ribs

    Preheat the oven to 300°F (150°C). Season the beef short ribs with salt and black pepper. In a large ovenproof pot or Dutch oven, heat olive oil over medium-high heat. Sear the ribs on all sides until browned, about 4-5 minutes per side. Remove the ribs and set aside.

    Sauté Vegetables

    In the same pot, add chopped onion, carrots, and celery. Sauté for about 5 minutes until softened. Add garlic and sauté for another minute.

    Deglaze and Braise

    Pour in the red wine, scraping the bottom of the pot to deglaze. Bring to a simmer and add beef broth, thyme, and bay leaves. Return the short ribs to the pot. Cover and transfer to the oven. Braise for about 6-8 hours, or until the meat is tender.

Preparation of Pearl Couscous

    Cook Couscous

    In a medium saucepan, bring water to a boil. Add pearl couscous, olive oil, and salt. Reduce heat to low, cover, and simmer for about 10-12 minutes or until couscous is tender and water is absorbed. Fluff with a fork and set aside.

Preparation of Roasted Broccolini

    Roast Broccolini

    On a baking sheet, toss broccolini with olive oil, salt, and black pepper. Spread in an even layer and roast in a preheated oven at 400°F (200°C) for about 15-20 minutes until tender and slightly charred.

Assembly

    Serve

    Once the beef short ribs are done braising, remove them from the pot and slice if desired. Serve the ribs over a bed of pearl couscous with roasted broccolini on the side. Drizzle some of the red wine demi-glace from the pot over the top.
