Baked Michigan Whitefish

Prepare the Fish

Preheat the oven to 375°F (190°C). Place the Michigan whitefish fillets onto a greased baking dish. Drizzle with olive oil, then season with salt and black pepper.

Bake the Fish

Bake the fish in the preheated oven for about 20 minutes or until the fish flakes easily with a fork.

Make the Lemon Beurre Blanc

In a small saucepan, melt 1 cup of butter over medium heat. Add minced shallots and sauté until translucent. Pour in the white wine and lemon juice, and bring to a simmer. Cook until reduced by half, then remove from heat.

Finish the Sauce

Whisk in the remaining butter, one tablespoon at a time, until the sauce is creamy. Add salt and pepper to taste.

Serve

Plate the baked whitefish and drizzle with the lemon beurre blanc sauce. Garnish with fresh parsley.
