    Prepare the Pickled Tomatoes

    Slice the tomatoes and place them in a bowl. Cover with white vinegar and let them pickle for at least 30 minutes.

    Make the Blue Goat Cheese Spread

    In a bowl, mix the blue goat cheese and cream cheese together until smooth. Set aside.

    Cook the Bacon

    In a skillet, cook the thick-cut bacon over medium heat until crispy. Remove and place on paper towels to drain.

    Form the Patties

    In a bowl, mix the ground beef with salt and black pepper to taste. Form into two equal patties.

    Cook the Patties

    In the same skillet used for the bacon, add a little olive oil if necessary and cook the patties for about 4-5 minutes per side, or until they reach your desired doneness.

    Assemble the Burger

    On the bottom half of each burger bun, spread a generous amount of blue goat cheese spread. Place one patty on top, followed by two slices of bacon, pickled tomatoes, and a handful of spring mix. Top with the other half of the bun.
