Method
Preparing the Gochu Glaze
Make the Gochu Glaze
In a small bowl, mix together gochujang, soy sauce, honey, rice vinegar, and sesame oil until well combined. Set aside.
Cooking the Ahi Tuna
Season and Cook the Tuna
Pat the tuna steaks dry and season with salt and pepper. Heat vegetable oil in a skillet over medium-high heat. Once hot, sear the tuna for about 1-2 minutes on each side until the outside is browned but the inside remains rare. Brush the gochu glaze over the tuna during the last minute of cooking.
Preparing the Miso Potatoes
Cook the Potatoes
Boil the potatoes in salted water until fork-tender, about 15-20 minutes. Drain and return to the pot. Add miso paste, butter, and chopped green onions. Mash together until smooth and well combined. Season with salt to taste.
Cooking the Honey Chili Broccoli
Sauté the Broccoli
In a separate pan, heat olive oil over medium heat. Add broccoli florets and sauté for 5-7 minutes until tender. Stir in honey, chili flakes, and salt to taste. Cook for an additional 2 minutes.
