Slow Roast the Prime Rib

Preheat your oven to 450°F (232°C). Season the prime rib generously with salt and black pepper. Place it in a roasting pan and roast for 20 minutes. Reduce the temperature to 325°F (163°C) and continue to roast for approximately 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare. Let it rest for 20 minutes before slicing.

Caramelize the Onions

In a skillet, melt the butter over medium heat. Slice the onions thinly and add them to the skillet. Cook, stirring occasionally, until the onions are golden brown and caramelized, about 20-25 minutes. Season with salt and pepper to taste.

Make the Horseradish Sauce

In a small bowl, combine the sour cream and prepared horseradish. Mix well and set aside.

Assemble the Sandwich

Slice the French baguette in half lengthwise. Layer the sliced prime rib, caramelized onions, and Swiss cheese on one half of the baguette. Spread the horseradish sauce on the other half and close the sandwich.

Prepare the Au Jus

In a saucepan, heat the beef broth until simmering. Adjust seasoning with salt and pepper as necessary.

Slice the sandwich into portions and serve with a side of au jus for dipping.
