Panko Fish Sandwich Directions

Prepare the Fish
Preheat the oven to 400°F (200°C). Set up a breading station by placing flour in one bowl, beaten eggs in another, and panko breadcrumbs in a third.

Bread the Fish
Season the fish fillets with salt and pepper. Dredge each fillet in flour, dip in beaten eggs, and finally coat with panko breadcrumbs.

Bake the Fish
Place the breaded fish fillets on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until golden brown and cooked through.

Make the Orange Vinaigrette
In a small bowl, whisk together orange juice, olive oil, salt, and pepper. Toss the spring mix with the vinaigrette just before serving.

Prepare the Lemon Tartar Sauce
In another bowl, mix mayonnaise with lemon juice until combined. Adjust seasoning with salt to taste.

Assemble the Sandwich
Toast the burger buns if desired. Place a piece of baked fish on each bun, add a slice of cheese, a generous handful of the dressed spring mix, and a dollop of lemon tartar sauce. Top with the other half of the bun.
