Prepare the Potatoes

Wash and peel the russet potatoes, then cut them into thin strips (about 1/4 inch thick) to create fry shapes.

Soak the Potatoes

Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch. Drain and pat dry with a towel.

Preheat the Oven

Preheat your oven to 425°F (220°C).

Season the Fries

In a large bowl, combine the dried potato strips with olive oil, garlic powder, paprika, salt, and black pepper. Toss until the potatoes are evenly coated.

Bake the Fries

Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.

Remove the fries from the oven, sprinkle with chopped parsley and grated Parmesan cheese. Serve immediately while hot.
