1. Prepare the Chimichurri Sauce

In a bowl, combine chopped parsley, minced garlic, red wine vinegar, red pepper flakes, lemon juice, salt, and olive oil. Mix well and set aside.

2. Prepare the Potatoes

Peel the potatoes and cut them into fries. Rinse them under cold water to remove excess starch and pat dry with paper towels.

3. Cook the Fries

Heat oil in a deep fryer or large pot to 350°F (175°C). Carefully add the fries in batches and fry until golden brown and crispy, about 5-7 minutes. Drain on paper towels and season with salt.

4. Cook the Steak

Preheat a grill or grill pan over medium-high heat. Rub the sirloin steaks with olive oil, salt, and pepper. Grill the steaks for about 4-5 minutes on each side for medium-rare doneness, or until desired level of doneness is achieved.

5. Serve

Slice the grilled steak against the grain and plate it alongside the garlic fries. Drizzle chimichurri sauce over the steak and serve immediately.
