Fried Chicken Preparation

Marinate Chicken

In a large bowl, combine buttermilk, paprika, garlic powder, salt, and black pepper. Add chicken thighs and ensure they are fully submerged. Cover and refrigerate for at least 4 hours or overnight.

Prepare Breading

In a separate bowl, mix flour and cornstarch. Remove chicken from buttermilk, allowing excess to drip off. Dredge in the flour mixture, pressing lightly to adhere.

Fry Chicken

Heat oil in a deep skillet or fryer to 350°F (175°C). Fry the chicken in batches for 8-10 minutes until golden brown and cooked through. Drain on paper towels.

Garlic Aioli Preparation

Mix Aioli

In a small bowl, combine mayonnaise, minced garlic, lemon juice, and salt. Mix well and adjust seasoning to taste.

Hand Cut Fries Preparation

Fry Potatoes

Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the cut potatoes in batches until golden and crispy, about 4-6 minutes. Drain on paper towels and season with salt.

Sandwich Assembly

Assemble Sandwich

Slice the rosemary ciabatta in half. Spread garlic aioli on both sides. Layer with fried chicken, Brie cheese, and arugula. Serve with Melba toast and hand-cut fries on the side.
