    Prepare the Beef

    Season the beef brisket with taco seasoning, salt, and black pepper. In a large pot, sear the beef on all sides over medium-high heat until browned.

    Braise the Beef

    Add enough water to cover the beef, bring to a boil, then reduce to a simmer. Cover and cook for about 3 hours, or until the beef is tender and easily shredded.

    Make the Salsa

    In a bowl, combine diced pineapple, minced jalapeño, lime juice, and chopped cilantro. Mix well and set aside.

    Prepare the Tacos

    Once the beef is done, shred it with two forks. Warm the corn tortillas in a dry skillet over medium heat. Fill each tortilla with shredded beef, pineapple jalapeño salsa, a dollop of sour cream, and pico de gallo.

    Serve

    Serve the tacos immediately, garnished with extra cilantro if desired.
