    Prepare the Onions

    Slice the yellow onions thinly. In a large pot, melt the butter and olive oil over medium heat. Add the onions and cook, stirring occasionally, until they are caramelized and golden brown, about 20-25 minutes.

    Add Flavors

    Add minced garlic, thyme, bay leaf, salt, and black pepper to the caramelized onions. Stir well and cook for another 2 minutes.

    Combine with Broth

    Pour in the beef broth and bring the mixture to a simmer. Let it cook for about 20 minutes to allow the flavors to meld together. Remove the bay leaf before serving.

    Prepare Croutons

    While the soup is simmering, prepare the croutons. Preheat the oven to 375°F (190°C). Cut bread into cubes, toss with olive oil, garlic powder, salt, and pepper. Bake for about 10-15 minutes until golden and crispy.

    Ladle the soup into bowls, top with croutons, and sprinkle with shredded Swiss and mozzarella cheese. You can place the bowls under a broiler for 2-3 minutes to melt the cheese if desired.
