Preparation Instructions
- 1
Prepare the Chicken
Season the chicken breasts with your favorite blackening seasoning. In a skillet over medium-high heat, cook the chicken for about 6-7 minutes on each side or until fully cooked. Let it rest for a few minutes, then slice it into strips.
- 2
Make the Salsa
Combine diced pineapple and jalapenos in a bowl. Add a pinch of salt and mix well. Adjust seasoning to taste.
- 3
Prepare the Nachos
On a large baking sheet, spread the tri-color corn chips evenly. Layer the blackened chicken, pineapple jalapeno salsa, and the three types of cheese over the chips.
- 4
Melt the Cheese
Preheat your oven to 350°F (175°C). Place the baking sheet in the oven and bake for about 10-12 minutes, or until the cheese is melted and bubbly.
- 5
Garnish and Serve
Remove the nachos from the oven and top with sliced avocado. Drizzle with chipotle ranch dressing before serving.
