    Cook the Pasta

    In a large pot, bring salted water to a boil. Add elbow pasta and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Bechamel Sauce

    In a saucepan, melt 2 tablespoons of butter over medium heat. Whisk in 2 tablespoons of flour and cook for about 1 minute. Gradually add 2 cups of milk, whisking continuously until the sauce thickens. Season with salt and pepper.

    Combine Ingredients

    In a large mixing bowl, combine the cooked pasta, diced chicken, mild buffalo sauce, bechamel sauce, jack cheddar cheese, and half of the parmesan cheese. Mix until everything is evenly coated.

    Bake the Dish

    Preheat the oven to 350°F (175°C). Transfer the mixture into a greased baking dish. Top with the remaining parmesan cheese and blue cheese crumbles. Bake for about 25-30 minutes until bubbly and golden on top.

    Remove from the oven, let it cool for a few minutes, and garnish with chives if desired. Serve hot.
