Seafood Stuffed Chicken Breast
Method
Preparation and Cooking
- 1
Prepare the Filling
In a bowl, combine the shrimp, crab meat, cream cheese, garlic, green onions, lemon juice, salt, and black pepper. Mix well until combined.
- 2
Stuff the Chicken
Preheat the oven to 375°F (190°C). Take each chicken breast and make a pocket by slicing it horizontally but not all the way through. Spoon the seafood mixture into each pocket.
- 3
Wrap with Bacon
Wrap each stuffed chicken breast with two strips of bacon, securing with toothpicks if necessary.
- 4
Cook the Chicken
Heat olive oil in a large oven-safe skillet over medium heat. Add the wrapped chicken breasts and cook for about 4-5 minutes on each side until the bacon is crispy. Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through.
- 5
Cook the Pasta
While the chicken is baking, cook the angel hair pasta according to package instructions. Drain and set aside.
- 6
Serve
Plate the angel hair pasta, place the stuffed chicken breast on top, and sprinkle with grated Parmesan cheese and chopped parsley.
