Prepare the batter
In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold water, whisking until smooth and well combined.

Prepare the seafood
Pat the shrimp, calamari, and fish fillets dry with paper towels. This will help the batter stick better.
Frying

Heat the oil
In a deep pot or fryer, heat the vegetable oil to 180°C (350°F).

Fry the seafood
Dip each piece of seafood into the batter, allowing any excess to drip off. Carefully place them into the hot oil, a few pieces at a time, and fry until golden brown and crispy, about 3-5 minutes. Remove with a slotted spoon and drain on paper towels.
Serving

Plate the platter
Arrange the fried seafood on a large serving platter. Serve with lemon wedges and tartar sauce on the side.
