Cooking the Risotto

    Stir in the Arborio rice and cook for 2-3 minutes, allowing it to absorb the flavors.

    Deglaze with White Wine

    If using, pour in the white wine and cook, stirring frequently, until the wine is mostly absorbed.

    Incorporate Broth Gradually

    Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Wait until each ladle is mostly absorbed before adding the next.

    Continue this process for about 18-20 minutes, until the rice is al dente and creamy, adding more broth as necessary.

Finishing the Dish

    Stir in the frozen peas and chopped spinach, cooking for an additional 2-3 minutes until heated through and the spinach is wilted.

    Remove from heat and stir in the grated Parmesan cheese, salt, and black pepper to taste.
