Flatbread Preparation

    Activate Yeast

    In a small bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until foamy.

    Make Dough

    In a large mixing bowl, combine all-purpose flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.

    Knead Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

    Let Dough Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Topping Preparation

    Prepare Mushrooms

    While the dough is rising, clean the wild mushrooms and slice them. Sauté in a skillet over medium heat with a bit of olive oil for about 5-7 minutes until softened and golden.

    Season Mushrooms

    Season the sautéed mushrooms with salt and pepper to taste. Remove from heat and set aside.

    Prepare Herbs

    Chop the fresh herbs finely and mix them with the sautéed mushrooms.

Assembly and Baking

    Preheat Oven

    Preheat your oven to 475°F (245°C) and place a baking stone or baking sheet inside to heat up.

    Shape Flatbread

    Once dough has risen, punch it down and transfer to a floured surface. Roll it out into a rectangle or circle, about ¼ inch thick.

    Add Toppings

    Transfer the rolled-out dough to a piece of parchment paper. Brush the surface lightly with truffle oil. Evenly distribute the mushroom-herb mixture over the dough and sprinkle with grated Parmesan.

    Bake Flatbread

    Carefully slide the flatbread onto the hot baking stone or baking sheet. Bake for about 10-12 minutes, or until the edges are golden and crispy.

    Finish with Arugula

    Remove from the oven and top with fresh arugula. Drizzle with additional truffle oil if desired.
