Panna Cotta Preparation

Bloom the Gelatin
In a small bowl, sprinkle the gelatin powder over 3 tablespoons of cold water. Let it sit for about 5 minutes to bloom.

Heat Cream and Milk
In a saucepan, combine the heavy cream, whole milk, granulated sugar, and a pinch of salt. Heat over medium heat, stirring occasionally, until the mixture is hot but not boiling.

Dissolve the Gelatin
Remove the saucepan from heat and add the bloomed gelatin to the hot cream mixture. Stir until the gelatin is completely dissolved.

Add Vanilla
Stir in the vanilla extract into the mixture.

Pour into Molds
Pour the panna cotta mixture into individual molds or cups. Refrigerate for at least 4 hours, or until set.
Berry Sauce Preparation

Prepare the Berries
In a medium saucepan, combine the mixed berries, granulated sugar, and lemon juice.

Cook the Sauce
Cook over medium heat, stirring gently, until the berries have released their juices and the mixture becomes syrupy (about 5-7 minutes).

Cool the Sauce
Remove from heat and let the berry sauce cool to room temperature before using.
