Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a medium bowl, whisk together olive oil, lemon juice, garlic powder, salt, black pepper, and fresh dill. Add the salmon fillets and coat them well with the marinade. Cover and let it marinate in the refrigerator for at least 30 minutes.

  2. 2

    Preheat the Grill

While the salmon is marinating, preheat the grill to medium-high heat (around 375°F to 400°F or 190°C to 200°C).

Preparing the Vegetables

  1. 3

    Prep the Vegetables

Wash and trim the asparagus. Cut the bell peppers into strips and slice the zucchini into rounds. In a bowl, toss the vegetables with olive oil, salt, and black pepper until evenly coated.

  2. 4

    Grill the Vegetables

Once the grill is hot, place the vegetables on a grill basket or directly on the grill grates. Grill for about 10-15 minutes, turning occasionally, until they are tender and have nice grill marks.

Grilling the Salmon

  1. 5

    Grill the Salmon

Remove the salmon from the marinade and place it skin-side down on the preheated grill. Grill for about 6-8 minutes on each side, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).

Serving

  1. 6

    Plate and Serve

Once the salmon and vegetables are done, remove them from the grill. Plate the grilled salmon alongside the grilled vegetables. Garnish with additional fresh dill and lemon wedges if desired. Serve immediately.
