Calamari Preparation

    Rinse the cleaned squid under cold water and pat dry with paper towels. Slice the squid into ½ inch rings.

    In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well to ensure even distribution of spices.

    Dredge the Squid

    Add the squid rings to the bowl with the coating mixture. Toss well until the squid is evenly coated.

    Heat the Oil

    In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Squid

    Carefully add the coated squid rings to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown. Use a slotted spoon to transfer the fried squid to a plate lined with paper towels to drain excess oil.

    In a small bowl, combine the mayonnaise, minced garlic, lemon juice, olive oil, salt, and black pepper.
