Tomato Balsamic Confit

Prepare the Tomatoes
Preheat your oven to 150°C (300°F). In a mixing bowl, combine the cherry tomatoes, balsamic vinegar, whole garlic cloves, fresh thyme, olive oil, salt, and black pepper. Toss until the tomatoes are well coated.

Bake the Confit
Spread the coated tomatoes and garlic on a baking sheet lined with parchment paper. Bake in the preheated oven for about 2 hours, or until the tomatoes are soft and caramelized. Allow to cool slightly before using.
Basil Oil

Blend the Basil Oil
In a blender, combine the fresh basil leaves with olive oil and a pinch of salt. Blend until the mixture is smooth and well combined. Strain through a fine mesh sieve if a smoother consistency is preferred. Set aside.

Plate the Dish
On a serving platter, place the burrata cheese in the center. Surround it with the tomato balsamic confit and slices of prosciutto. Drizzle the basil oil over the top and garnish with fresh basil leaves.

Serve immediately as an appetizer or a light meal, enjoying the combination of flavors and textures.
