    Preheat your oven to 300°F (150°C). Season the prime beef short ribs generously with salt and black pepper on all sides.

    In a large Dutch oven or oven-safe pot, heat olive oil over medium-high heat. Sear the ribs on all sides until browned, about 3-4 minutes per side. Remove the ribs and set aside.

    Sauté the Vegetables

    In the same pot, add chopped onion, minced garlic, chopped carrots, and chopped celery. Sauté for about 5-7 minutes until the vegetables are softened.

    Deglaze the Pot

    Pour in the red wine and scrape the bottom of the pot to release any browned bits. Bring to a simmer and cook for about 3-4 minutes.

    Add Broth and Herbs

    Stir in the beef broth, fresh thyme, and bay leaves. Return the seared ribs to the pot, ensuring they are mostly submerged in the liquid.

    Cover the pot with a lid and transfer it to the preheated oven. Braise for 3 to 4 hours, or until the meat is tender and easily pulls away from the bone.

    Remove the pot from the oven. Discard the bay leaves and thyme sprigs. Serve the short ribs with the braising liquid spooned over the top.
