Preparation
Make the crust
Preheat the oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan.
Bake the crust
Bake the crust in the preheated oven for 8-10 minutes or until lightly golden. Remove from the oven and let it cool.
Prepare the filling
In a large mixing bowl, beat the softened cream cheese and sugar together until smooth. Add the vanilla extract, sour cream, and mashed bananas, and mix until well combined.
Add eggs
Add the eggs one at a time, mixing well after each addition until fully incorporated.
Pour and bake
Pour the banana cream cheese filling over the cooled crust. Bake in the oven for 50-60 minutes, or until the center is set and a slight jiggle remains.
Cool and chill
Allow the cheesecake to cool at room temperature for at least 1 hour, then refrigerate for at least 4 hours or overnight before serving.
