Prepare the Caramel

In a medium saucepan, heat the granulated sugar over medium heat, stirring constantly until it melts and turns a deep amber color.

Add Butter

Remove the saucepan from the heat and carefully whisk in the unsalted butter until fully incorporated.

Heat the Cream

In a separate saucepan, heat the heavy cream until it is just about to simmer. Remove from heat.

Combine Caramel and Cream

Slowly pour the hot cream into the caramel mixture, whisking constantly until smooth.

Mix Egg Yolks

In a mixing bowl, whisk together the egg yolks, vanilla extract, and sea salt until combined.

Temper the Egg Yolks

Gradually add the warm caramel mixture to the egg yolks, whisking continuously to prevent the yolks from cooking.

Cook the Mixture

Pour the entire mixture back into the saucepan and cook over low heat, stirring constantly until it thickens and coats the back of a spoon (about 82°C or 180°F).

Cool and Set

Remove from heat and transfer the cremeux to a bowl. Cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming. Chill in the refrigerator for at least 4 hours or until set.
