Prepare the Pork Belly
Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat. Rub salt, black pepper, and fennel seeds all over the pork belly, ensuring the seasoning gets into the scored skin.

Cook the Pork Belly
Preheat the oven to 160°C (320°F). Place the pork belly in a roasting pan and drizzle with olive oil. Roast for 2 to 2.5 hours until the meat is tender. Increase the oven temperature to 220°C (428°F) for the last 30 minutes to crisp up the skin.

Rest and Slice
Once cooked, remove the pork belly from the oven and let it rest for 15 minutes before slicing into portions.
