Cooking the Beef

    Sear the Beef

    Season the American Wagyu beef with salt and black pepper. Heat a skillet over medium-high heat, add a bit of olive oil, and sear the beef on all sides until a nice crust forms, about 4-5 minutes per side for medium-rare. Remove from heat and let rest.

Making Garlic Potato Puree

    Prepare the Potatoes

    Peel and chop the russet potatoes. Boil them in salted water until tender, about 15-20 minutes. Drain and set aside.

    Make the Puree

    In a saucepan, melt the butter and sauté minced garlic until fragrant. Add the potatoes, heavy cream, salt, and black pepper. Mash until smooth and creamy.

Preparing Demi-Glace

    Cook the Sauce

    In a saucepan, combine beef stock, red wine, shallots, thyme, and bay leaf. Simmer until reduced by half, about 30 minutes. Strain and keep warm.

Making Rosemary Cabernet Chantilly

    Whip the Cream

    In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add Cabernet Sauvignon, rosemary, and powdered sugar. Continue to whip until stiff peaks form.

Sautéing Vegetables

    Cook the Spinach and Carrots

    In a skillet, heat olive oil over medium heat. Add julienned carrots and sauté for 3-4 minutes. Add spinach, season with salt and pepper, and cook until wilted.

Plating

    Serve

    On a plate, create a bed of garlic potato puree, slice the rested beef and place on top. Drizzle demi-glace over the beef, add wilted spinach, and garnish with teardrop tomatoes. Finish with a dollop of rosemary cabernet chantilly.
