Base Preparation
Prepare Spinach
In a large skillet, heat a teaspoon of olive oil over medium heat. Add 2 cups of fresh spinach and sauté for 3-4 minutes until wilted. Remove from heat and set aside.
Protein Preparation
Grill Chicken
Season 1 cup of chicken breast with salt and pepper. Grill on medium-high heat for approximately 6-7 minutes on each side or until fully cooked. Let it rest for 5 minutes, then slice.
Prepare Chickpeas
Drain and rinse 1 cup of canned chickpeas. You can serve them as is or sauté them in a skillet with a little olive oil and spices for 5 minutes for extra flavor.

Prepare Avocado
Slice 1 medium avocado in half, remove the pit, and scoop out the flesh. Slice it into wedges.
Prepare Cherry Tomatoes
Rinse 1 cup of cherry tomatoes and slice them in half.
Prepare Cucumber
Dice 1 medium cucumber into small pieces.
Assemble Dressing
In a small bowl, whisk together 2 tablespoons of olive oil, 1 tablespoon of lemon juice, 1 teaspoon of salt, and 0.5 teaspoons of black pepper.

Build Your Bowl
In a large bowl, start with your choice of base (quinoa, spinach, or brown rice). Add your preferred protein (grilled chicken, chickpeas, or tofu). Top with sliced avocado, halved cherry tomatoes, diced cucumber, and crumbled feta cheese. Drizzle with the prepared dressing and toss gently to combine.
