Soak the Slices
Place the potato slices in a bowl of cold water for about 30 minutes. This helps to remove excess starch and makes the chips crispier.
Dry the Potatoes
After soaking, drain the potato slices and pat them dry with paper towels to remove excess moisture.
Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a candy thermometer for accuracy.
Fry the Chips
Carefully add a handful of potato slices to the hot oil in batches. Fry until golden brown and crispy, about 3-4 minutes per batch. Avoid overcrowding the pot.
Drain and Season
Remove the fried chips with a slotted spoon and place them on paper towels to drain excess oil. While still hot, sprinkle with sea salt, paprika, garlic powder, and onion powder to taste.
Cool and Serve
