Tortilla Chips
Prepare Tortillas
Stack the corn tortillas on a cutting board and cut them into six equal wedges to create chip shapes.
Heat Oil
In a large pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping in a small piece of tortilla; it should sizzle immediately.
Fry the Chips
Carefully add the tortilla wedges to the hot oil in batches. Fry for about 2-3 minutes or until they are golden brown and crispy. Remove the chips with a slotted spoon and place them on paper towels to drain excess oil.
Season Chips
Sprinkle the hot chips with salt while they are still warm, ensuring even coverage.
Guacamole
Prepare Avocados
Slice the ripe avocados in half, remove the pit, and scoop the flesh into a mixing bowl.
Mash Avocados
Using a fork or a potato masher, mash the avocados to your desired consistency (smooth or chunky).
Add Lime Juice
Pour in the lime juice to the mashed avocados and mix well to combine. This helps prevent browning.
Add Vegetables
Stir in the finely chopped red onion, diced tomato, and fresh cilantro until evenly distributed.
Season Guacamole
Add salt to taste and mix well. Adjust the seasoning with more lime juice or salt if necessary.
