Method
Barbacoa Beef
Prepare the Beef
In a slow cooker, place the chuck roast. Season with salt, black pepper, cumin, oregano, and minced garlic.
Add Flavorings
Add chipotle peppers, chopped onion, lime juice, and beef broth to the slow cooker.
Cook the Beef
Cover and cook on low for 8 hours or until the beef is tender and easily shredded with a fork.
Shred the Beef
Once cooked, remove the beef from the slow cooker and shred it with two forks. Return the shredded beef to the slow cooker to soak in the juices.
Rice
Cook the Rice
In a medium saucepan, combine long-grain rice, water, and salt. Bring to a boil.
Simmer
Once boiling, reduce the heat to low, cover, and simmer for about 18-20 minutes or until the rice is tender and water is absorbed.
Fluff the Rice
Remove from heat and fluff the rice with a fork before serving.
Assembly
Assemble the Bowl
In a serving bowl, layer the cooked rice as the base. Top with shredded barbacoa beef, black beans, corn, diced avocado, and a dollop of sour cream.
Garnish
Sprinkle with chopped cilantro and serve with lime wedges on the side.
